Located in the heart of Banff National Park, a UNESCO World Heritage Site and "Castle in the Rockies", the world-famous Fairmont Banff Springs hotel stands as a landmark in the picturesque alpine town of Banff, Alberta.

You will meet your guide at STOCK Food and Drink in the main lobby of the Fairmont Banff Springs Hotel. With a table reserved either inside or on the terrace, weather permitting, the tour will start with refreshments while taking a peak into how the hotel sources some “mile zero” ingredients year-round despite living in a winter zone six months of the year.

The tour will then progress into the heart of the hotel for fine French Brasserie fare at the newly refurbished Vermillion Room for a classic dish and beverage pairing. You’ll step into a grand space that sweeps you off your feet and into a beautiful brasserie with a menu serving dishes with French elegance and Canadian charm.

You’ll visit Grapes Wine Bar and 1888 Chophouse before they open to the public and be treated to exquisite house made ingredients.  At Grapes Wine Bar, house-cured meats and artisan cheeses are perfectly paired with their pantry of preserves. 1888 Chophouse’s executive Chef JW Foster’s commitment is to presenting a modern twist on the authentic chop house with a menu focused on prime cuts of Alberta beef, ocean wise seafood and sustainably sourced wild game. At 1888 you'll taste a dish that is completely Albertan and a true delicacy of the region.

  • Tours run in all weather conditions as you will be warm and snug in the castle.
  • Proof of age may be required. Please bring government issued photo ID. Non-alcoholic beverages will be substituted for those under 18.
